Light Yet Delicious Lamb Recipes Every Home Cook Must Know

Lamb is one of the most popular meats for Australians since ages. Generations of Aussies have enjoyed as diverse lamb recipes as Classic Roasted Leg to Rich Lamb Ragu.

Here is a light yet delicious lamb recipe for you and your family. After a hard day’s work, you can prepare this yummy in minutes, and share them at the dinner table with your family.

Lamb Ragu with Gnocchi and Herbs

This is a weekend recipe and takes 180 minutes of cooking time. Ideal for four people, the preparation time for this yummy is just 20 minutes. Here’s how you prepare and cook this delicacy.

Ingredients

I kg lamb neck, 2 tablespoon olive oil, 2 tbsp plain, couple of crushed garlic cloves, I brown diced onion, 1 diced carrot, 1 teaspoon dried oregano, 1 tablespoon chopped fresh basil leaves, 2 cups of salt-reduced vegetable stock, 400 grams of crushed tomatoes, 2 tbsp tomato paste, ½ cup of red wine. 2 tbsp flat-leaf parsley, 20 grams of butter, 500 grams of potato gnocchi, and 40 grams of parmesan cheese.

Method

Heat your oven to 175 degrees centigrade. Pour oil into your lamb, season it well, and then, sprinkle some flour over the meat.

Now, heat 50% of your oil in a big frying pan over medium heat. Cook the meat, and turn it over occasionally every 5 to 7 minutes. Place the lamb in a casserole.

Next, take the remaining oil in a large frying pan, heat it, and then, add some garlic. Only cook it until the mixture turns golden yellow. Put celery, basil, oregano, and carrot in this mixture. Cook it for 5 minutes until the mixture turns golden.

Now put the stock to the pan, and also add crushed tomatoes, tomato paste, and red wine. Season this mixture with salt and pepper, and cook it for 5 minutes. Put it inside the casserole.

Cover your lamb with foil and cook it for 3 hours in the oven or until the meat starts falling off the bones. While the lamb is cooking, prepare your gnocchi according to specifications on the packet. When the gnocchi is prepared, drain it well until there is no water.

Now transfer your cooked lamb to a heatproof bowl and shred it in a way that the bones go away. Once this is done, return lamb to the sauce and season it and add parsley. Stir the mixture for some good consistency.

Now put some butter in a frying pan and heat it until the butter melts. This process shouldn’t take more than 5 minutes. Put some gnocchi and heat it for some time until it turns golden. Toss it for 3-5 times to get it right.

Now your food is ready. Serve ragu with gnocchi and put some extra parsley and parmesan for the right taste.

Some quick tips for you

  1. For great results, use the slow cooking option. After the lamb becomes brown, put it on slow cooking mode.
  2. You can serve your Ragu with pasta or polenta. Add vegetables or salad of your choice for great taste.
  3. Top your Ragu with gremolata for great results.
  4. You don’t have to prepare your Ragu after the lamb is cooked; you can make it in advance.
